It's good to be home

A dark and rainy Friday night.  The end of another long work week.  A good game of hockey on TV, and a big pot of homemade beef vegetable soup for my guys.  There's nothing like comfort food for the soul, and what's better in the fall and winter than a hearty bowl of tummy-warming soup? My guys like mine chock full of stuff...








Vegetable Beef Soup


Ingredients:

1 lb. sirloin tips or beef cubes
1 small bag frozen mixed veggies
3-4 medium potatoes, peeled and cubed
1/4 cup parsley flakes (I use parsley dried from my garden)
1 can beef broth
1/4 cup tomato paste
salt & pepper to taste
2 green onions, finely chopped (fresh from my garden)
1/4 cup chopped onion
Mrs. Grass vegetable soup packet
1-2 tablespoons oil to coat pan
1/2 cup mini bow tie pasta

Instructions:

1. Brown meat & onions in oil in large pot.
2. Add soup starter mix & 8 cups of water.
3. Boil, then lower heat and simmer for 20 minutes.
4. Add frozen veggies, potatoes, parsley flakes, broth, tomato paste, bow tie pasta, and salt & pepper. 
5. Let simmer for approximately 1 hour before serving.

  4. I used to make beef stew the traditional way but when money got tight I began using ground beef in it. A friend of mine said that she used to make that on camp outs with her daughter's Girl Scouts troop and they called it Cowboy Stew. You are right...that's good stuff on a chilly night. You take good pictures of food. I haven't learned how to successfully do that, yet.

  6. Judy, I went to the store and didn't know what pkg. of Mrs. Grass soup to get to make the veg. soup. They had a lg. pkg of soup that had everything in it; pasta, vegetables, etc. and then they had the small pkg. of veg. soup mix that you can also use to make a dip. Also, what size can of beef broth did you use. Sorry for all the questions but I want it to turn out right (yours looks so good).

    Yes, it's the large packet (7.48 oz that makes 1/2 gallon) of Mrs. Grass with all the stuff in it (I just add more stuff to it!) You can use either the homestyle beef vegetable packet or just the vegetable soup packet - both give equally good results. The beef broth is a standard size can (14.5 oz. I think?!?) - you can add more to suit your own taste. Last time I made it I used two cans and it was delish! Don't be afraid to experiment and add what you like and omit stuff you don't. I promise it'll be awesome! My hubby asked me to make it again yesterday!! :)
